Besides "lokum" (Turkish delight) coming from
the word "rahat ul-hukum" in meaning of "throat comforter"
has been known in Anatolia since the fifteen century, it
outspreaded especially within the Ottoman Empire boards in
the seventeen century.
As for
Europe, it started being known as the name "Turkish delight"
thanks to an English traveler in the eighteen century. Both
taste and making of Turkish delight that used to be prepared
with honey or compound of flour and pectin has changed by
that refined sugar being known as "sugar loaf" and
particularly starch was found and brought to the country in
the seventeen century.
